Prof. Dr. Anderson de Souza Sant’Ana
Director
Associate Professor at the Faculty of Food Engineering at Unicamp. He works in teaching, research, and extension in the area of Food Microbiology at the Department of Food Science and Nutrition. He holds a degree in Industrial Chemistry from Universidade Severino Sombra (2004), a Master’s in Food Science from Universidade Estadual de Campinas (2007), and a PhD in Food Science from Universidade de São Paulo (2011). He completed a sandwich doctoral internship at Rutgers – The State University of New Jersey (2010-2011), a postdoctoral fellowship at Universidade de São Paulo, and obtained the title of Livre Docente at Universidade Estadual de Campinas (2019).
Currently, he serves as editor-in-chief of Food Research International (Elsevier) and Current Opinion in Food Science (Elsevier). Since 2020, he has been editor of the book collection Methods and Protocols in Food Science (MeFS) published by Springer. He is on the editorial board of Journal of Applied Microbiology, Letters in Applied Microbiology, British Food Journal, Food Bioscience, Journal of Food Protection, Applied and Environmental Microbiology, and International Journal of Food Microbiology. He has been a member of the International Committee of Predictive Modelling in Food since 2013 and part of the roster of experts of the Joint FAO/WHO Expert Meeting on Microbiological Risk Assessment (JEMRA) [Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO)] since 2018.
He is an international member of the Research Foundation Flanders (FWO) – Bio4 Fellowship panel since March 2021. He coordinated the Graduate Program in Food Science at FEA/UNICAMP (score 7, CAPES) for two terms (2015-2017 and 2017-2019) and served as Coordinator of Extension and Research for two terms (2019-2020 and 2020-2022). He is currently the Director of FEA/UNICAMP (2022-2026). He appears on the list of Highly Cited Researchers (Clarivate Web of Science, 2020, 2021, 2022, and 2023). In 2020, he received the Zeferino Vaz Academic Recognition Award. Since 2022, he is Deputy Ambassador – FEMS (Federation of European Microbiological Societies).
His research focuses on advanced quantitative aspects of food and beverage microbiology and safety (predictive microbiology and quantitative risk assessment) aiming to understand the effect of different processing and consumption steps on microbiological quality and safety. Additionally, his interests include detection/enumeration, phenotypic and genotypic characterization, microbial behavior and ecology, control methods for pathogenic and spoilage microorganisms in foods and beverages, food safety management tools (GMP, SSOP, HACCP), beneficial microorganisms applied to foods and beverages (probiotics), and food preservation technologies.
Prof. Dr. Ana Sílvia Prata
Associate Director
Associate Professor in the Department of Food Engineering and Technology at the Faculty of Food Engineering, Universidade Estadual de Campinas. Chemical Engineer (UFSCar – 2000), with a Master’s (2002) and PhD (2006) from FEA/UNICAMP. She conducted part of her PhD at École de Chimie de Montpellier (2003) and postdoctoral research at École Nationale des Ingénieurs des Techniques des Industries Agro Alimentaire (ENITIIA) (2008), at Unicamp (2009), and at the Dept. of Food and Nutrition, University of Minnesota (2021).
Her teaching career includes significant periods in the Department of Chemical Engineering (UFSCar – 2005-2007) and Faculty of Applied Sciences (UNICAMP – 2010-2015), teaching Transport Phenomena and Unit Operations. Her main research area focuses on the development of controlled release systems based on colloids or structured materials, aiming for ecologically and commercially viable processes. Applications include food, cosmetics, agriculture, aquaculture, and textiles. Research interests include agro-industrial byproducts, alternative protein sources, and 3D printing.
