Regulations

The objectives of the Food & Nutrition Program are to generate new scientific knowledge in the greater area of food and health and to graduate high quality human resources to act in research and teaching in Brazil and abroad. The research developed by the program covers multidisciplinary subjects that include classical and modern nutrition concepts accompanied by a profound knowledge of food; the study of the impact on health of the changes suffered by the nutrients and bioactive substances during industrial processing; the use of modern methods to evaluate the sensory properties and the development and adjustment of new analytical techniques designed for special consumer groups; the study of quality systems; the question of food quality in its widest sense; the surveying and evaluation of consumer profiles; public food policies; commercialization channels; and food safety. The program received a grade 5 in recent evaluations made by CAPES, and graduates future researchers with an integrated view of the food/consumer interaction aimed at the final objective of the food: that of sustainable health.
